Before this week I never heard of the "polar vortex" nor did I know that it could collapse and blanket the US in record low temperatures. I am a winter person, love to snowshoe and ski but I'm even finding the wind chill to be a little cold for me. It has been in the teens here in NY and I can't even get my dog out of the door for a quick run…
I have stationed myself in front of our wood burning stove and have been cooking nothing but soups and stews. Curry is the most warming to me, so enjoy some curry pork stew.

Crockpot Curried Pork
by Diane Balch simplelivingeating.compreparation 15 minutes serves: 6 - 8
Ingredients: 6 pounds of pork loin chopped into 2 inch cubes 2 onions chopped 4 carrots chopped 1 small celery root chopped 4 red potatoes cubed 2 1/2 cups of chicken broth 2 13.5 ounce cans of unsweetened coconut milk 1 teaspoon of cayenne pepper 1 tablespoon of lemongrass paste or 1 stick of fresh lemongrass 2 teaspoons of turmeric 2 teaspoons of curry powder 1/2 teaspoon ground cardamom 1/2 teaspoon of ground coriander seed
1) If you have time brown the meat on all sides before putting in the crockpot with the vegetables. It will taste fine without browning, but it does add flavor.
2) Whisk all the spices with the coconut milk and chicken broth in a large bowl. Pour this over the meat and vegetables in the crockpot.
3) Cook on low for 6 hours.
